Accepted name: isopullulanase

Reaction: Hydrolysis of pullulan to isopanose (6-α-maltosylglucose)

Glossary: pullulan = a linear polymer of (1→6)-linked maltotriose units

Systematic name: pullulan 4-glucanohydrolase (isopanose-forming)

Comments: The enzyme has practically no action on starch. Panose (4-α-isomaltosylglucose) is hydrolysed to isomaltose and glucose. cf. EC (pullulanase) and EC (neopullulanase).
